Hearty Noodle Soup
This weekend's snowstorm had me craving some good old fashioned comfort food. I make a lot of soups and stews in the winter but was looking for a good broth-based soup this time around. Kids were having sleepovers and needed something that might be a crowd-pleaser for some non-plant-based eaters.
I was impressed with the simplicity of this recipe from The Vegan 8 and it was perfect with my husband's homemade herbed sourdough bread. I did use the nutritional yeast that was optional in the recipe and seasoned with Tony's Creole Seasoning which is one of my favorite go-to ways to add a bit of kick and saltiness at the same time. Leftovers for lunch today were delicious!
