Smashed Chickpea Salad (think vegan egg salad)
I don't know about you all but being at home all the time has been challenging from a food-perspective. Lunches especially in our house are not as well planned as our dinners usually are. This recipe from Vanilla and Bean has become a staple and is quick and easy. Note the recipe is just for 2 servings. I generally make it x 4 as we all love having it around. We skip the tumeric and love it with sprouts, banana peppers and tomatoes. Hope you enjoy!
