This warm weather has me looking for fresh salads and a way to "clean out the fridge" with ingredients. This simple goddess bowl is easily modified to use what you have available and save a trip to the grocery store. The dressing is key - I always double and have some leftover as a veggie dip or spread. Hope you enjoy it as much as I do! I use greens on the bottom, a healthy scoop of quinoa and load it with veggies. Last night was roasted beet, eggplant, cucumber, yellow bell pepper and red cabbage. Beautiful and delicious!
