Thanksgiving Stuffed Acorn Squash

One of the most common questions I get about eating plant-based is “What do you eat at Thanksgiving?”  The first few years I would rely on sides made without butter or cream but as the years have gone on I’ve discovered more and more fun main-dish options for plant based eaters like this great one from Love and Lemons.  A hearty grain such as farro could easily be substituted for the tempeh if you prefer but don’t skip those pomegranate arils – they add such a festive touch!
